Cheesecake in a mug!
This cheesecake in a mug recipe is easy to make and especially good for people who just can't wait! It can be made with frozen raspberries, chocolate chips or a swirl of jam. Microwave and enjoy!
Ingredients:

1 egg white
-
6 tbsp low fat cream cheese

4 tbsp low fat sour cream
-
4 tbsp sugar
-
1/2 tsp vanilla extract
-
1 tsp lemon juice
-
1 tsp cornflour
-
2 tbsp frozen raspberries
-
1 butternut snap cookie
Method:
In a bowl, whisk the egg white with the sour cream and cream cheese until fluffy. Add in the rest of the ingredients except for the cookie.
Mix well and pour into a mug or large cup.
Microwave for 2 mins.
Using a plastic ziploc bag, place the cookie inside and seal and crush the cookie with something heavy – be careful here!
Sprinkle the crushed cookie on the top of the cheesecake.
Refrigerate to set
Real Mexican Soft Tacos!
What you will need:
Soft corn tortillas
Some chopped tomatoes
Grilled chicken breast strips
Shredded cheese
Lettuce
Salsa
Directions:
Warm tortillas on grill or in microwave. Add a scoop of tomoatoes, chicken strips, lettuce and cheese and enjoy!
Mini Pizzas!
What you will need:
4 Mini Pizza Bases
1 1/2 cups grated mozzarella cheese
3/4 cup pineapple pieces in syrup, drained
Ham and Pineapple topping
2 tablespoons tomato paste
4 slices chopped ham
Chicken Topping
1 cup chicken, chopped
2 tablespoons BBQ sauce
BBQ sauce, extra
Directions:

Preheat oven to 200 degrees celcius.

Ham and Pineapple Pizzas: Spread two bases with 1 tablespoon each of tomato paste.

Divide the ham and half the pineapple onto each pizza base.

Sprinkle with mozarella.

Chicken Pizzas: Spread the other two bases with 1 tablespoon each of BBQ sauce.

Divide the chicken and rest of the pineapple and put onto each base.

Drizzle with extra BBQ sauce and sprinkle with mozzarella.

Cook pizzas for about 8-10 minutes or until the cheese is browned!
